Not really required for most flours. It will give bread more lift.
Bakers use it to improve lift and shorten the fermentation process. In a bread machine it will increase the height of the bread by 2.5cm.
It contains -Soya Flour, Emulsifier E472e, Dextrose, Vegetable Fat, Ascorbic Acid. Use one teaspoon per 500 grams.
The soya flour and fat help create a finer crumb structure, while the vitamin c speeds up the fermentation.
What is Granary Flour and Wessex Cobber?
They are both malted wheat flours. Granary is a trade name owned by Rank Hovis Ltd. Wessex Cobber is our brand. They are both made by adding flaked malted whole wheat to white flour.
The flakes we use are rolled flat and are easier on the teeth.
What is the difference between Six Seed and Mixed Grain?
They are both white flour based. Six Seed has small seeds added - Linseed, Poppy seed, Sesame seed, Millet, Sunflower Seed. I know it does not add up, but I count wheat as a seed. It makes a bread that is very east to eat and kind to teeth.
Mixed Grain uses larger flakes of grain - Wheat and Rye Flakes plus Sesame Seed, Poppy Seed, Bran. It is a much rougher texture.
Both flours have a malt flour added to give a Granary / Wessex Cobber type background flavour.
Why do we not use sugar in our machine recipe?
Sugar adds a little more lift to your loaf. It also darkens the crust colour. We find that you can’t notice the difference.
What order should I add the ingredients to my machine?
In order in the recipe on the front of the packet. It keeps the salt away from the yeast as the salt would kill the yeast.
The Bread and Flour Regulations set out what we can and cannot do with flour.
We add by law, although we do not have to put it on the ingredient list - Calcium Sulphate E516, Nicotinamide (Vitamin B3) Iron, Thiamine (vitamin B1) and Calcium Carbonate.
We may also add, depending on the harvest, vital Wheat Gluten. Since January 2009 we have not add enzymes or Ascorbic Acid.

The Food Standards Agency has stated that their is no nutritional benefit from using organic wheat.
It is down to how it is grown. They still use fertilizers and insecticide (pyrethrum grown in Kenya).

What is the Chorleywood Bread Process?
It enabled bakeries to make bread faster and use wheat grown in the UK.
At the time the wheat breeders had developed wheat varieties that were good enough to use in a grist for bread but they were still not strong enough to replace imported wheat's. The Chorleywood Bread Process enabled them to use more home grown wheat and add more water, making it cheaper to produce. It put many small bakeries out of business.
The process uses a mixer that runs at high speed that has the air vacuumed out of the mixing bowl to give a fine bubble structure to the crumb. The addition of enzymes and dough relaxants enables the dough to go straight into the tin were it rises and then is baked.
